Once the merlot grapes went into the tank, they were cold soaked for 4 days at 10°c and the must was heated to 16°c over the next two days, with a selected yeast strain chosen and inoculated.

Lastella Harvest Blog: Allegretto Merlot Crush

Here we go my first ever blog!  The Allegretto was harvested 5.6 tons which breaks down to 1.3 ton per acre.  This gave us 120/ 30lb picking bins for sorting.  30 bins per skid averaged a weight of 450 kilos.
