Edible Canada’s Maple Syrup Festival kicks off with Viper Central – the really rad Bluegrass band Chef Greg Reid with the maple pulled pork flapjack – AMAZING! Courtney Buryta, Edible Restaurant Manager, serving up everything maple syrup Edible’s signature Maple Leaf cocktail True North Bartender Ewen Cameron holding one of Edible Caanada’s specialties – the Maple Bacon Caesar BBQ Pork, Apple & Maple Sausages on a fresh bun with sauerkraut, maple mayo & maple mustard, complimented with a Maple Bacon Caesar Natalie Graham holding maple banana bread in a sea of syrups the Edible Canada family – right out of the deep woods of Granville Island!!! Colony’s Andrew Pare and Jennifer Corrigan pouring a couple of beer from a selection of ten draft beers on rotating taps. Colony’s Wok Fired Squid, strip-cut and pan seared in potato flour, garlic, chili’s and pea shoots; and the Pork Belly Sliders, with braised and grilled pork belly, a sweet soy-miso glaze, garlic mayo, pickled red onion and crispy shallots The owners and the vision behind Colony, the Kerasiotis family. Cousin Alex Graffos, Bill Kerasiotis and brother Chris Kerasiotis Dinner’s ready! Fully loaded table with craft beer to quench the thirst Executive Chef Brett Turner’s “Winning Wings” – marinated in a Maker’s Mark marinade, stuffed with cream cheese, wrapped in maple bacon, deep fried and grilled. These wings live up to their name, taking first place in the 2012 Gastown BBQ Festival Executive Chef Brett Turner and the team behind the mouth-watering dishes on Colony’s ‘classic-with-a-twist’, pub style menu. I wish I could be there! Don’t even notice about this festival!
