BLUE WATER CAFE HOSTS “ULTIMATE CALIFORNIA WINE DINNER

Vancouver, B.C. – In 1976, Stephen Spurrier’s famous ‘Judgement of Paris’ shook the very firmament of the wine world. More than 30 years later, California wines have progressed through several iterations—from the over-oaked chardonnay of the 90s, and the jammy, fruit-forward cabernets of the last decade—to a place of nuance and inflection.

Together, Blue Water Cafe and Vintage Corks are delighted to present a selection of prestigious California wineries, whose style reflects that modern dialect of subtle craft, traditional methods, and sustainable growing practices.

Cast in Blue Water Cafe’s private wine room, executive chef Frank Pabst and his talented brigade have crafted an equally modern menu to marry with each of the wines carefully chosen for this evening.

“These producers have time and time again earned a place on our wine list,” says wine director Andrea Vescovi, Vancouver’s ‘2009 Sommelier of the Year’. “This is an unprecedented collection of premium estates coming together in one glorious evening.”

THE BUTCHER DINES AT THE TABLE

The next Two Chefs and a Table Wine Drinker Dinner will be held on Wednesday, March 23rd and will focus on the in-house creations of our partner Big Lou’s Butcher Shop with a menu that features locally sourced meats in every course, even dessert. The partnership between Two Chefs and a Table and Big Lou’s Butcher Shop is unique in Vancouver and gives the restaurant an advantage with expertise, selection and freshness of essentially an in-house butcher shop.

Taking inspiration from the Chinese tasting menu style most notably espoused by Susur Lee, the menu starts off with the main course. By eating the entrée first, hunger is sated immediately and solid base in the belly is built upon which flavours and wines can be savoured and layered through the succeeding smaller courses until dessert, which remains the last course of the night.

Big Lou’s award winning partner Polderside Farms provides the poultry courses while Sloping Hills provides the pork for the first course and the showstopping pork belly bacon gelato dessert. Pemberton Farms produces some of the most succulent beef around and their rib eye is one of the featured entrees. Finally, Nicola Valley Farm has won great praise for their lamb which features in two courses on the menu.

Paul Watkin of the Icon Wine and Spirits Group has been a major contributor of expertise and inspiration to the Wine Drinker Dinners and, in keeping with the reversal of courses, he has selected some unorthodox pairings for this menu working on more opposite tastes than usual. Focussed on wines from Portugal and South America, the sometimes contrasting flavours serve to highlight specific facets of each course.

The Butcher at the Table Wine Drinker Dinner will combine the finest sustainable, local meats and artisanal butchering with expertly selected wines and an unconventional course order for what’s sure to be an utterly memorable night of food and wine.

The dinner costs $75 per person (tax and gratuity not included and reservations are strongly recommended. To book your table, email info@twochefsandatable.com or call 778-233-1303. Two Chefs and a Table is located at 305 Alexander Street.

LAST CALL FOR LE VIEUX PIN “APOGEE” MERLOT

As we mentioned a while ago we have changed the name of the Apogée Merlot to Le Vieux Pin Reserve Merlot. This was done to avoid confusion as well as to honor an agreement made with L’École 41 in Washington State.

Our agreement allows us to continue selling wines with the Apogée name until April 2011 and we are already down to a very limitted amount of the Le Vieux Pin Apogée 2005 and 2006.

This is the very same wine that 3 Michelin star celebrity chef Jean-Georges was “Blown Away by” (see link:http://www.youtube.com/watch?v=PCh6n26k8RI) when he tasted it at Market Restaurant in Shangri-La Hotel in Vancouver (video curtsey of Chris Morrow, CNN)

We are offering this wine for $60 dollars a bottle. This is the best ever price we have offered on this wine and this offer expires strictly on April 1st when our agreement with L’École 41 requires us to stop using the “Apogée” name or until quantities last!

We have also dug into our wine library to offer a very special vertical release. This 3 year vertical is a terrific way to start a collection, or makes a fantastic gift.
Le Vieux Pin Apogée merlot vertical:
2x Apogée 2005, 2x Apogée 2006 and 2x Merlot Reserve 2007

For $378 (only $63 a bottle!)

Orders are processed on first come first serve basis. To order this very special limited offer, please contact Ashlea by email, phone or fax:

CALLING LOCAL RESTAURANTS AND RETAILERS! COME AND MEET YOUR MAKER!

Friday, March 4, 2011 (Vancouver, BC) – Local food businesses in Metro Vancouver and the Fraser Valley are signing up to Meet Your Maker where local food producers and local food buyers find each other, scheduled for Monday March 14. This local event is modeled after Portland, Oregon’s very successful ‘Farmer-Chef Connection’ which since 2001, has grown to connect more than 250 producers and 150 buyers who are collectively doing over $19 million in annual business.

Co-organizers FarmFolkCityFolk and Local Food First know that consumer demand for local food has been rising steadily during the past few years, especially with the popularity of the 100 Mile Diet. “It’s more than a 100 mile diet, though, it’s a long-term investment in Vancouver’s food future,” says FarmFolk’s Bonita Magee, “and if Vancouver wants to be the greenest city by 2020, we’re going to have to increase local food production.”

Tara McDonald, Executive Director of the Vancouver Farmers Markets and Local Food First committee member, adds “Meet Your Maker provides a great opportunity for small businesses to connect with suppliers, gain access to niche products, and scale up their businesses by going local.” She knows all about demand as she has seen Vancouver’s farmers’ markets increase from one seasonal market to five seasonal markets with at least one market every week, year round.

Businesses attending Meet Your Maker include farmers and chefs, but also fishers and processors, distributors and retailers. Past participants have commented in a variety of ways that Meet Your Maker provides opportunities they don’t find elsewhere, with comments such as “At other events, you meet consultants, today I met real people,” and “Really enjoyed connecting with people I wouldn’t normally connect with.” The benefits are many ranging from contacts, inside information, feedback on your business, marketing, promotion, trends, to understanding what retailers want, and more. This year, lots of producers have signed up and organizers are urging more local restaurants and retailers who want to increase the amount of local food they’re offering their customers to come to Meet Your Maker. “We’ve got a bigger venue and there’s lots of room to grow, so come on out!” says Magee.

With funding from Vancity, this year’s agenda is packed and there’s a free shuttle bus from downtown Vancouver to help keep the event’s carbon footprint to a minimal. Organizers have invited David Yudkin to be the keynote speaker. Yudkin owns Portland’s Hotlips Pizza and has attend their Farmer-Chef Connection since its beginning. “Who better to inspire and inform our local businesses than someone from the original event?”

Meet Your Maker, now in its 3rd year, has been moved from Vancouver to Fort Langley to make it easier for farmers to attend. Co-organizer Bonita Magee of FarmFolkCityFolk explains, “In 2008 and 2009, the event was held the first week of February in Vancouver and both years we woke up to unexpected snow storms. The storm the first year caused a major accident on Highway 1, preventing more than 20 farmers from getting to the event.” So they’ve moved the date and the location. “The Fort Langley Community Hall is beautiful and it’s a perfect venue for this event.” With its large hall and smaller rooms, participants can break out into different groups to attend one of three workshops offered: Creating a Professional Buying Club; Sourcing Food Processing Equipment; or Sausage Making Equipment and Ingredients. Magee explains, “the workshops chosen are from previous years’ evaluations, so it’s really the participants who pick them. This is their event, we just organize it.”  Presentations include New City Market and Shared Harvest, ‘Metro Vancouver’s newest dating service – for food.’ Businesses interested in attending can find more information and a registration link at www.farmfolkcityfolk.ca.
