In the last year, I bet you could have thrown a lawn dart in the air and chances are very good that it would have pinned a restaurant with pork belly on its menu. This classic mouth-watering piece of fatty protein is back in vogue with a vengeance and has unceremoniously and thankfully dethroned the beef short-rib as this city’s most ubiquitous offering. And why not? What’s not to love about a dish that is dangerously close to a entree-size serving of bacon?

Would Michael Pollan approve? Unlikely, unless it was your Philipino or Spanish friend’s engagement party and the roasted beast was ethically raised by the biodynamic farmers next door and fattened up on a local, organic vegan diet of non-Monsanto corn. However, r.tl’s meat sourced by Two Rivers is pretty close.
