The Times Online has a good quick interview with should-be-superstar Fergus Henderson in todays edition. I love him , he’s like the UK version of Alice Waters, but without the faint smell of bullshit new age spiritualism and goofy floppy hats. Have a quick look, even though he’s wrong about rice cookers.

I like what he says about trends and food.
I wonder when Vancouver will get over the trends in food and just get on with making good quality and good tasting food.
Too many trends are shaping (for the most part) what chefs are putting out these days. It’s a shame. I don’t like to eat trends and gimmicks.

I must say the Cirrculator is Fantastic, best and efficent way to cook a tender meat.
Trends…i mean our Palates are alays changing we get bored of food then we crave it. Tho Trends that are there just because or shock value…well pfft
Its like a Piece of Mint or Rosemarry twig if it does not add anything then it shouldn’t be there

Great interview. I have been to St John’s before, it’s such a great place. Interesting to read a little about the man behind the action!
