Canadian Chefs’ Announce Providence Farm as the Host Location for 2010

canadian-chefs-congressVancouver, BC… The Canadian Chefs’ Congress 2010 steering committee, in association with the Canadian Chefs’ Congress and The Chefs’ Table Society of BC, is excited to announce that British Columbia has been honoured with the opportunity to host the next sitting of the Congress, which will be held in 2010. On September 11, 2010, chefs, cooks, apprentices and culinary students from across Canada will converge on Providence Farm, in the heart of the beautiful Cowichan Valley, for two days of conversation and deliberation on the state of our water ways, our effect on marine life and what constructive steps our industry can build to help improve the health of our oceans.

2010 Theme: Oceans for Tomorrow
Beginning with the keynote speaker, Dr. David Suzuki, chefs will have the opportunity to learn about our oceans and how they can effect change. A series of seminars and workshops on numerous food and ocean related topics will give the opportunity for delegates to engage one on one with a variety of speakers on the topics of their particular expertise. Workshops and seminars are designed to provoke thought and conversation. Representatives from a wide variety of sustainable fisheries will be on hand to provide information on how to get high quality sustainably harvested seafood onto menus, what to look for, and the questions to be asking. There will also be a variety of local suppliers, producers, and farmers displaying unique product and demonstrating responsible stewardship of valuable renewable resources.

Delegates will have the opportunity to sample Canadian inspired dishes from leading provincial and territorial chefs from across the country as well as enjoy the bounty of  British Columbia as chefs from around the province present the very best we have to offer. The weekend will be a series of unique tastes and experiences as chefs mingle with fellow chefs, sipping BC wine or trying our ales, beers, ciders, and mead.

The 2010 Canadian Chefs’ Congress delegate package is $200 plus processing fee. The Congress is open to chefs, cooks, apprentices, culinary students and teachers from across Canada. Group bookings over 10 people get 10% off the standard delegate price. Space is limited. The first 200 registrants are invited to the exclusive whole roasted pork media dinner on Friday, September 10, 2010. The heritage hogs will be specifically raised and fed for the event and the meal will be prepared by members of the Chefs’ Table Society of BC. Chef Daniel Boulud Joins Steve Nash For Dinner – Tickets On Sale

db bistro_logo VANCOUVER, BC – db Bistro Moderne owners David and Manjy Sidoo announced today their evening with steve, a benefit dinner at the acclaimed restaurant on Friday, September 18th, to support the Steve Nash Foundation.  Bistro Chef Stephane Istel, alongside Bistro namesake Chef Daniel Boulud will be preparing a four-course meal for approximately 75 guests, including NBA stars and Vancouver elite.

One of America’s leading restaurateurs, Chef Boulud arrives to Vancouver for his first visit since April. He resides in New York City where he headlines the Bistro’s sister restaurant in Midtown Manhattan, as well as restaurants DANIEL, Café Boulud, Bar Boulud and, most recently, DBGB Kitchen and Bar.  With Café Boulud in Palm Beach, Daniel Boulud Brasserie at the Wynn Las Vegas Resort, Maison Boulud in Bejing, and Vancouver’s db Bistro Moderne, Chef Boulud is internationally renown; with the James Beard Foundation awards for Outstanding Restaurateur, Best Chef of New York City, and Outstanding Chef of the Year, he is also internationally respected as one of the world’s best chefs and restaurateurs.

“The work Steve is doing with at-risk and disadvantaged youth is so important to Manjy and I, and is very close to my heart.  I had mentors as a young man, without whose help I wouldn’t be where I am today and in a position to give back.  I know that Daniel feels the very same way about mentoring young people.  He mentors every day at every one of his restaurants.  It will be great for the four of us to collaborate on the 18th,” says David Sidoo.

The evening will feature cocktails by Kettle One and Bombay Sapphire as guests mingle, followed by a four-course meal paired with Mission Hill wines.  NBA players in town for Nash’s Showdown in Downtown event on Saturday, September 19th, will also be in attendance.

Two Chefs and a Table continue their series of Wine Drinker Dinners in September with a five-course menu that combines both a component wine tasting and a delicious selection of perfectly matched Two Chefs dishes. Set to take place Wednesday, September 30th, this Wine Drinker Dinner will be a great opportunity to dig a little deeper into the process of wine matching and tasting while enjoying a Two Chefs and a Table menu of inspired local-sourced creations.

Along with the traditional food and wine pairing, the meal will include a taste component before every course. For example, the main course of Beef Tenderloin with a cherry demi-glace is paired with a Vina Tabali Pinot Noir (2007) and, before the dish is served, the wine will first be presented with a cherry to allow diners to identify and enjoy the specific flavour pairing before they dive into the whole dish. With tasting notes and selections made by Paul Watkin of the Seycove Group, the evening will be informative and educational as it pleases and satisfies.

From course to course, the tastes of the menu reflect the coming change of season from summer to fall with an emphasis on big, warm flavours like Mushroom Tarte and Beef Tenderloin combined with the richness of caramelized late-season fruits. These dinners have received rave reviews every time out and at only $65 per person (excluding tax and tip), they pack immense value.

15th Annual Feast of Fields ~ Another Sold Out Success!

feast-of-fields1Vancouver, BC    You can tell an event’s success when you see willing, uncomplaining volunteers sort wet garbage at the end of the long hot day (all part of making a lighter footprint). Maybe not an appetizing clue to the success of this year’s Feast of Fields but one that says everything about the dedication the Feast inspires from everyone involved.

Something else that was inspiring: a 10 year old boy deciding West’s smoked octopus with nasturtium pesto was actually good. Thank you parents. That single mouthful is his memory forever. Adds new meaning to heirloom seeds.

Then there was the bliss montage. Seen beside many tents, a person standing by themselves with their eyes closed and their mouth slowly moving (good food and drink has a way of demanding exclusive rights to all your senses). Wickaninnish Inn’s halibut and julienne seaweed on top of an exceptional seaweed cracker was only one of many to have this effect.

This was the 15th annual Feast of Fields but every year is fresh like new – like a harvest. The chefs always surprise us, the musicians play, the sun shines, the guests feast. What a way to close out summer.

About the Winery
Almost 50 years ago Andrew Peller raised a glass to toast his very first vintage. Today the family proudly carries on his tradition of crafting wine with an uncommon commitment to quality.  Peller Estate Wines have won many prestigious awards for their signature products, like Icewine, as well as Chardonnays and Rieslings, which are as good or better than those produced anywhere abroad. They have also earned international acclaim, being recently named Best Canadian Winery of the Year at London’s International Wine & Spirit Competition.

It all began in 1927, after an exhaustive search Andrew Peller decided to plant his first vineyards in British Columbia’s Okanagan Valley and, soon afterwards, opened a modest winery there as well. In 1969 he and his brother Joe purchased a winery in Ontario. Today Joes’ son, John Peller, continues the family tradition of making quality wines both here in BC and in Ontario.

Feast on Arts and Culture at the SUSTENANCE Festival

Vancouver, BC – The Roundhouse, Get Local (a partnered project of FarmFolk/CityFolk and the Vancouver Farmers Market) and the BC Farmers’ Market Nutrition and Coupon Project are pleased to announce the full schedule for “SUSTENANCE Festival: Feasting on Art & Culture.” A first time, unique celebration, SUSTENANCE Festival starts on Thursday, October 1 and culminates on World Food Day: October 16th.

SUSTENANCE Festival kicks off with the opening celebration on Saturday, October 3, a party for all of the exhibitors and producers who are participating in SUSTENANCE Festival, special guests and the public.  Guests can enjoy local food and Lotusland Wines while perusing the exhibits, including internationally acclaimed El Maiz Es Nuestra Vida (“The Corn is Our Life”), a contemporary art exhibition from Oaxaca, Mexico that guides the public through the history of corn throughout the Americas, and CORNUCOPIA, an interactive installation designed to bring an understanding to the average citizen of the great environmental stress and energy consequence of industrializing our food.  The night will feature live music, presentations, and a chance to be amongst the first to explore the many exhibits of SUSTENANCE Festival.  For a full list of SUSTENANCE Festival exhibits and events visit www.roundhouse.ca/sustenance.

SUSTENANCE Festival will offer a bounty of fun, learning, and agri-tainment, with over 20 food related art exhibits, 15 interactive pieces on display, and loads of events over two weeks.  The CITYFOOD Kitchen will feature local food cooking classes by Chef Darren Clay, and workshops to teach people how to preserve food to eat locally through the winter.  The Edible Vancouver Community Stage will see workshops and interactive art, like the Food Photography 101 workshop presented by local photographer Jackie Connelly on Wednesday, October 7.  Family Day on Saturday, October 10 will entertain kids with piñata making and breaking, a pumpkin pie eating contest, and a workshop by Growing Chefs, a non-profit society that works to inspire a love of growing and eating sustainable food in young people.

SUSTENANCE Festival will also feature a special screening of the award-winning foodie film, Tableland, on Wednesday, October 14.  Produced by local filmmaker Craig Noble, Tableland is a culinary expedition in search of the people, place and taste of North American small-scale, sustainable food production.  Tableland celebrates the positive working models of growing and consuming local food, and inspires audiences to seek out local food in their own communities.

Thursday, October 8 will have people saying “OHHHHH FOOD!”  A naughty night of food with forbidden fruit wine, saucy storytelling, erotic culinary poetry reading, and special sexy production: those dirty fruits and vegetables brought to you by Biovia Organic Link Ltd., will make for an exciting event for Adults Only.

The final day of festivities will celebrate World Food Day on Friday, October 16 with a Pocket Market from 11:00 am-5:00 pm set up on site at The Roundhouse.  All produce will come from Southlands Farm, a 2.6 acre family farm located in Vancouver’s Southlands neighbourhood. The evening will bring the Closing Celebration starting at 6 pm, with real beer, food, a performance by The Pressure Cooker Theatre, and music by The Carnival Band.

SUSTENANCE endeavours to connect the communities of art, culture, and food security. From global to local, from historic to present day, the art and culture of food will be something everyone can feast on.  SUSTENANCE Festival will be held at the Roundhouse Community Arts & Recreation Centre in Yaletown, and at several satellite locations.
