An announcement will be coming very soon from Top Table announcing the appointment of Julio Gonzalez-Perini (formerly the chef of Federico’s Supper Club, The Beach House, Villa del Lupo) as the new executive chef at Cincin.
There is no word on whether Mr. Francois Gagnon will stay with the Top Table group of restaurants.

Another chef at CinCin? There must be something really wrong with the place to be going through so many chefs. Isn’t Julio from back in the early nineties? I think I will play it safe and keep my business at Cioppino”s, they never disappoint!
Julio is absolutely one of the very best in the city.
I would also say that Jack’s batting average for selecting Chefs has been pretty outstanding over the last 10 years or so. Frank Pabst being a great example.
Unlike vino’s little promo for Cioppinos I will definitely be checking out CinCin when Julio has moved in, and this will be my first visit in a few years.
I would have to agree with maggee on the Frank Pabst front, however I would strongly disagree with Julio being one of the best. I was never a fan of villa del lupo in its time and since then, he hasn’t really even been on the map as far as culinary talent in Vancouver. I found his food to be very bland and I would agree with vino on the old school comment. Perhaps that is what CinCin is after. I have been to CinCin only once in the last 6 months and the food is very contemporary and the most refined it has ever been in my opinion. Perhaps the return to a more traditional style is what they are looking for.
Kudo’s for Jack in hiring Julio, one of the last meals I ate in Whistler before moving was while he was G.M. at the Cam and trust me he had the game stepped up in short order.Congratulations .
As an aside, maybe you need to get out more captain if your meal at the Cam was one of the best you’ve ever had!
