
This year we wanted to make a more traditional Pinot Grigio with higher acidity, crisper flavours and enhanced aromatics without being sweet. The fruit was sourced from a cooler climate vineyard in Westbank, BC. The grapes came in at 23.22 brix with generous acidity. Vinified in a fully jacketed, temperature controlled, stainless steel tank that allowed for a lengthy, 32 day fermentation at 10-13 degrees Celsius. Read more inside…

I have to say this was the best behaved fermentation of a white wine I have ever had. The result is a wine with a refreshing nose! There are notes of perfume, pear, lemon tart, lime, tropical notes of mango and papaya, and a hint of straw. The palate delivers fresh; crisp flavours of lemon, lime, honey suckle tangerine peel and a dry finish with hints of elder flower. WOW!!! When the list is this long you know you have a good wine. I’m sure all the Vivace fans out there will be as pleased with this vintage of grigio as I am.
