Mon Bella Bistoria in Kitsilano has a new chef and a new menu.
Chef Jay Brault is out and Chef Lauren Campbell is in. Campbell’s resume has her returning from stages in Sydney, Australia and as a former sous-chef of Ambiente and Beckta Dining and Wine Bar in Ottawa.

Ouch. Never a good sign…
Not necessarily, change can be good thang. Yanking Bush for Obama, Luongo over Cloutier, Coke Classic over “New” Coke, the prove will be on the plate…or not, only one way to find out.
Perhaps. But the sort of change you talk of is different. Changes such as the above so soon are rarely positive.
Not every restaurant went out of the gates winning… If you know the history of some of our great Vancouver restaurants, you will remember that they too had some major chef changes in the beginning… and they are some of the most notable players.
I say, give Mon Bella a chance… it’s a tough enough business as it is and I think it’s great that they are doing what it takes to get it right.
