I recently got my hands on a copy of the new book celebrating West on Granville. A job well done to everyone involved. Although the cover says it’s by Warren Geraghty a quick read shows like a great restaurant, it too is a collaboration of many.
I saw Mr. Geraghty on the Noon News the other day promoting the book. And I had to ask, why is it necessary for chefs always to appear on TV in their whites? No other profession is expected to do TV appearances in their uniform. Doctors don’t appear in lab coats with stethoscopes dangling around their necks. I have no expectation that Dr. Rhoda Low is performing open heart in the hallway outside the studio prior to her appearance, nor do I suspect that Mr. Geraghty was sweating shallots in the CTV commissary prior to his appearance. So lose the whites on chefs, Mr. TV producer.

I think chefs feel more comfortable in them.
I would wear whites, its cheaper then a suit hah and that way if your with the GM or Boss people are like “oh he’s the chef”
I like the whites also. Most head chefs have toiled hard for the right to wear their name on their chef’s coat with respective title underneath. Kind of like a military badge of honour. Keep the whites, IMO.
Putting on whites makes you a different person, as Owen said. Plus, they are slimming. :)
Why should chefs follow what the doctors are doing anyways? Why generalise what people can and cannot do, or rather should or should not do in refence to perception. It could be said, “quit blogging bloggers go out and experience the real world”. But thats exactelly what I’m arguing against. To each his/her own!
