Grunberg Heading To Shangri-La’s Market

Ask most restaurant owners of some experience and they’ll tell you the number of top drawer general managers currently working in Vancouver could probably be calculated on a broken abacus. If they are indeed a select few, Paul Grunberg of Chambar is certainly one of them. A consummate professional, Grunberg is well liked and respected by his peers, with as much a talent for operations management as for details details details on the floor.

A press release should start making the rounds in today that will announce his hiring by Jean George Vongerichten as the general manager of Market, due this January in the Shangri-La Hotel. I’m glad that they are entrusting front of house stewardship of what will likely go down as one of the most highly anticipated restaurant openings in the culinary history of this city to a local, and I think his tappage is a testament to both his abilities and Team Vongerichten’s foresight. Chambar owners Karri and Nico Schuermans are just as thrilled as Grunberg with the appointment, and understandably very proud. Shangri-La, of course, is equally stoked.
