Not so long ago I alluded online and in print to a new restaurant going into the Great Wok space across the street from Fuel and Gastropod. The deal is done, and Laurent and Valerie Devin, two young and charming French imports, have given their notices at Diva at the Met and West (respectively). They’ve started an Opening Soon blog, and will be keeping us all up to do on their travails.

For all the people we worked for and with, you will discover a side of us you may not have known. We both are entrepreneurs and want to thank you for letting us discover Vancouver, and made us feel so welcome in the past year.

Bistrot Bistro concept outline
Bistrot Bistro is a creation of Valerie and Laurent inspired from their childhood memories.
Food rituals in their French households and the fun that arose from the shared family-friends experience at the dining table are the basis of the design and concept of this modern, hip French Bistro.
Food served as in extended families to be shared at the table drawn from the classic traditions of French country cuisine. The wine program will focus on food and wine compatibility and value. All wines will be available by the glass using a state of this art preservation system.
The design of the room will encompass slate floor, wood table, banquette, open kitchen and a vibrant color scheme, bringing the bistro concept design closer to our era.
Surrounded by friends and/or family, the guests will have the option to select light fare while enjoying a drink after work or indulge in simple comfort food in a fun and modern setting to while away the day’s travails.
Seated on the banquettes or at the communal table – a social center where the guests can mingle and enjoy the summer sun with light streaming in through the open ‘garage’ doors or glow in the warmth of the wall of candles to brighten you in the winter months.
A slice of the French country life on your plate in no time, in a locale where you will be a stranger only once.
