After last minute paint touch ups, it looks ready to go!
Pre-Opening Day:
The day began early as usual – picking up Adam from the airport. Adam is our architect consultant, who we flew back from Calgary (he was babysitting his grandkids) just to inspect the restaurant and finish the Schedule C for the city. After the inspection and the Schedule C, the day got going. We realize that we are opening tomorrow and have yet to have a single menu printed – all the drama. Then, my bartender tells me our POS system isn’t working properly, and we don’t have the proper cables to connect it. Looks like we might have open without a functional printer in the kitchen. Old school.

We are still missing Bar Stools. Lesson learned: custom jobs can only go out to those who have good reputations.
After a big morning of driving around, begging people to help, finally things are under control. The menus are coming, the printer “will be” couriered here tomorrow morning, and I have pretty much picked up all the things I need. It’s been two weeks of cooking in the kitchen with the painter outside painting, and today wasn’t any different. The last minute color change of the bathroom, the need to build a bread box, a cutlery box, a coat rack, and find crap we don’t have like an umbrella holder (this is Vancouver, everyone has an umbrella holder), has been stressful.

Pork belly or pork shoulder? One of of the last minute decisions we had to make.
The kitchen has never stopped. All the guys been busy prepping for the big day. Some last minute taste tests to make sure all is well with the flavors. Another long day has past. We feel good and ready for the big opening day tomorrow.
